About

me

Where tofu becomes something you actually want to cook — and eat.

Welcome to The Tofu Kitchen.

My name is Jason Guo, and I’m a Chinese chef living and cooking in China.
I’ve worked professionally in restaurant kitchens for more than five years, including time as a head chef, and I now run my own small restaurant where tofu appears on the menu almost every day.

I created The Tofu Kitchen to share one simple idea:

Tofu is not plain, boring, or tasteless.
When treated with care, tofu can be crispy, silky, comforting, deeply savory, and full of character.

⭐ My Story

I grew up in a household where tofu was part of everyday life.

On cold winter mornings, my mother made hot tofu soup with scallions and soy sauce. On busy school nights, we cooked quick tofu stir-fries with vegetables from our garden. Tofu wasn’t a “special ingredient”—it was humble, reliable, and deeply comforting.

Later, as a professional chef, I began to understand tofu on a deeper level.

I learned that tofu isn’t one ingredient, but many:
golden and crisp like braised pan-fried tofu, gently set and tender like silky steamed tofu with egg, or bold and unforgettable like mapo tofu.

Every region of China has its own tofu traditions, and every cook develops a personal relationship with it.

What surprised me most was how differently tofu is understood outside China. Too often, it’s treated as a bland meat substitute instead of an ingredient with its own identity. That gap—between how tofu is cooked in Chinese kitchens and how it’s perceived elsewhere—is what eventually led me to start this website.

Today, tofu remains my favorite ingredient to cook with.

My wife supports this project fully, and my 5-year-old daughter is my most honest taste-tester. She sits at the counter waiting for the first bite, and when her eyes light up, I know a recipe is ready to be shared. If she doesn’t like it, I go back to the stove.

🍽️ Why I Started This Website

The purpose of The Tofu Kitchen is simple:

to help people around the world feel confident cooking tofu at home.

Tofu deserves a place on kitchen tables everywhere—not just in China. It’s affordable, plant-based, nourishing, and incredibly flavorful when cooked well.

Because many readers outside Asia don’t always have access to the same ingredients, my recipes focus on clarity and flexibility. You’ll find dishes like crispy pan-fried tofu with savory glaze, comforting soups such as creamy tofu soup with clams, and approachable home-style meals like home-style tofu.

Every recipe includes:

  • Clear, step-by-step instructions in plain English
  • Practical ingredient substitutions
  • Tips for texture, crispiness, and flavor balance

If you already love tofu—welcome.
If you think tofu is boring—give me one recipe to change your mind.

🔪 My Cooking Philosophy

Cooking is more than technique.
It’s memory, aroma, patience, and care.

At The Tofu Kitchen, every recipe follows three principles:

Simplicity — Ingredients you can find, steps you can follow.
Authenticity — Flavors rooted in real Chinese home cooking.
Joy — Cooking should feel satisfying, not stressful.

I don’t believe in forcing tofu to imitate meat.
I believe in letting tofu be tofu—whether it’s gently steamed, pan-fried until golden, or simmered slowly in sauce.

✅ How These Recipes Are Tested

Trust matters—especially when you’re cooking something unfamiliar.

Every recipe on The Tofu Kitchen is tested multiple times before it’s published:

  • Cooked repeatedly in a real home kitchen
  • Measurements recorded in both grams and cups
  • Heat levels and timing carefully noted
  • Taste-tested by real people, including my family and restaurant guests

Understanding tofu fundamentals is just as important as following a recipe. That’s why the site also includes detailed guides like What Is Tofu, Types of Tofu, how to press tofu, and How to Make Tofu Crispy—all written from a Chinese kitchen perspective.
