Alkali-Soaked Tofu-Skin Stir (素炒豆腐皮): The 2-Minute Softening

The vegetarian plate I make that surprises meat-eaters is this one – alkali-soaked tofu-skin stir, and this home cook’s version reveals the secret in the fourth step: a two-minute dip in water with a pinch of baking soda turns the tough sheet silky and ready for sauce. A home cook wrote it in ten steps with the emphasis in the title – soaked in lye water, it is very soft and very flavored. I made it as written, and it is the tender, glossy plate that needs no meat at all.

Silky doupi triangles with wood-ear and peppers

Su chao dou fu pi (素炒豆腐皮) is alkali-soaked tofu-skin stir – doupi triangles soaked two minutes in water with a little baking soda until silky, then tossed with wood-ear and peppers in a soy-oyster glaze thickened with starch.

What Is Alkali-Soaked Tofu-Skin Stir?

This is the sheet unlocked by chemistry: dried wood-ear boils two or three minutes and is torn small; peppers are cut; and the hero move – two grams of edible soda dissolved in a bowl of hot water, where the triangle-cut doupi soaks for exactly two minutes. The soda softens the sheet so it drinks seasoning, the recipe underlines. Sichuan peppercorns bloom in oil and are scooped out; peppers cook to just-done with the wood-ear, the silky doupi joins over low heat, and the one-spoon soy, dark soy, vegan oyster, sugar, and salt glaze thickens with the starch water.

For the plain dry stir of the same sheet, my green pepper and dried tofu skips the alkaline bath.

Common Mistakes When Making This Dish

1. A tough, chewy sheet. Cause: no soda bath. Fix: the two-minute dip. 2. A bitter peppercorn bite. Cause: left in the pan. Fix: scoop them out. 3. Soggy peppers. Cause: over-cooked. Fix: just done. 4. A lumpy glaze. Cause: settled starch. Fix: stir before pouring. 5. A salty plate. Cause: soy, dark soy, and oyster. Fix: taste first.

Variations

With pork: A few shreds of meat first. Milder: No peppercorns. My scallion-oil dried-tofu shreds is the scallion version of the sheet.

Frequently Asked Questions

Why the soda bath? It softens the sheet so it drinks the sauce – the recipe’s key. How much soda? Two grams, the recipe says. Why scoop out the peppercorns? Fragrance without the bite. How long does it take? About 15 minutes after the wood-ear. Is it spicy? Not really – pepper-warm only, and my silken tofu potage is the soup to go with it, savory tofu and egg stir-fry the fast plate.

How to Serve

Serve with rice – with doupi and pork slices, green pepper and dried tofu, and home-style tofu for a vegetarian table, or with red braised tofu and golden pan-fried tofu for contrast.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours.

Allergen Notice

This recipe contains soy (doupi, soy sauce). It is free of gluten (verify the sauces), dairy, egg, nuts, fish, and shellfish (if using vegan oyster sauce).

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s alkali-soaked tofu-skin stir is the trick I keep for stubborn sheets, and the recipe’s double-emphasis on the soda bath is exactly why it works. I tested it as written. I have not tested the pork version, so that is your experiment, not my claim.
