Clay-Pot Beef & Yuba (腐竹焖牛肉): Velveted, Layered, Sealed 8 Minutes

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The pot I make when someone gifts you good handmade yuba is this one – clay-pot beef and yuba, and this home cook’s version treats the beef like velvet: black pepper, soy, oyster, starch, then oil, fifteen minutes. A home cook wrote it in nineteen steps with the warning in the fourteenth: low heat and eight minutes, because too long and too hot burns the pot. I made it as written, and it is the tender, saucy pot that makes a gift feel like a feast.

Velveted beef over yuba in a clay pot under a bean-paste sauce

Fu zhu men niu rou (腐竹焖牛肉) is clay-pot beef and yuba – velveted beef slices and soaked yuba layered over bloomed onion in a clay pot, sealed under a sauce of soy, bean paste, and starch, and simmered low for eight minutes.

What Is Clay-Pot Beef and Yuba?

This is the layered pot: beef is sliced thin and worked with black pepper, light soy, oyster sauce, and cornstarch, then a spoon of peanut oil and fifteen minutes’ rest. The sauce bowl comes next – salt, sugar, light soy, oyster, a spoon of yellow-bean paste, starch, and water. In the clay pot, ginger and garlic bloom, onion cooks fragrant and lies flat, and the soaked yuba and the beef layer on top in their own beds. The sauce pours over, the lid seals, and eight minutes over low heat does the rest – with scallion for the final minute.

For the fast pork stir of the same yuba, my yuba and pork stir takes minutes instead of the clay pot.

Common Mistakes When Making This Dish

1. Tough, chewy beef. Cause: no velvet rest. Fix: pepper, soy, oyster, starch, oil, fifteen minutes. 2. A burnt clay-pot base. Cause: heat too high or too long. Fix: low and eight minutes – the recipe’s warning. 3. A pasty, thick sauce. Cause: too much starch. Fix: one spoon. 4. Hard, uneven yuba. Cause: a short soak. Fix: the fifteen minutes, or longer. 5. A salty pot. Cause: soy, oyster, bean paste, salt. Fix: taste the sauce before it goes in.

Variations

Milder: Skip the bean paste. More vegetables: Mushroom between the yuba and the beef. My napa and yuba clay pot is the pork version of the layered pot.

Frequently Asked Questions

Why velvet the beef? Starch and oil hold the juices through the seal. Why layer, not stir? The layers cook in their own steam. Why low heat? High heat burns the base – the recipe’s warning. How long does it take? About 35 minutes with the marinating. Is it spicy? Not at all – and my silken tofu potage is the soup to follow, savory tofu and egg stir-fry the fast plate.

How to Serve

Serve from the clay pot with rice – with napa and yuba clay pot, yuba and shiitake braise, and home-style tofu for a pot table, or with red braised tofu and braised tofu with bok choy for contrast.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours.

Allergen Notice

This recipe contains beef, soy (yuba, soy sauce, bean paste), and shellfish (oyster sauce). It is free of gluten (verify the sauces), dairy, egg, nuts, and fish.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s clay-pot beef and yuba is the pot I make when someone brings good handmade yuba, and the recipe’s eight-minute warning is exactly how I treat a clay pot. I tested it as written. I have not tested the mushroom version, so that is your experiment, not my claim.
