Braised Juicy Tofu Puffs (爆汁油豆腐): The Lao Gan Ma Sponge Bowl

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The tofu dish that my guests swear is meat is this one – braised juicy tofu puffs, and this home cook’s version uses Lao Gan Ma chili crisp to make the sauce. A home cook wrote it in eleven steps with the boast in the title: better than meat. I made it as written, and it is the saucy, juice-bursting bowl that disappears with rice.

Halved tofu puffs in a glossy Lao Gan Ma sauce

Bao zhi you dou fu (爆汁油豆腐) is braised juicy tofu puffs – halved fried tofu braised in a Lao Gan Ma chili-soy sauce until it bursts with juice, finished with a starch glaze.

What Is Braised Juicy Tofu Puffs?

This is the tofu dish that acts like a meat dish: fried tofu puffs are halved to open their pockets, then braised in a sauce of Lao Gan Ma chili crisp, garlic, ginger, bird’s-eye chili, soy, vinegar, oyster sauce, salt, and a little sugar. The puffs simmer two to three minutes until they have drunk the sauce, then a cornstarch slurry thickens it into a glossy coat. Each piece bursts with juice – the recipe’s boast is not empty.

For the plain home-style tofu sibling of the same saucy pan, my home-style tofu is the everyday braise.

Why This Recipe Works

  • The Lao Gan Ma. Chili crisp depth – the sauce’s soul.
  • The halved puffs. Open pockets that drink and burst.
  • The two-to-three-minute soak. The juice, trapped inside.
  • The starch finish. The glossy coat.
  • Better than meat. The recipe’s honest boast.

Equipment Needed

  • A wok or skillet
  • A spatula
  • A small bowl for the sauce

Ingredients

  • Fried tofu puffs, halved
  • 1 tbsp Lao Gan Ma chili crisp
  • A little ginger, garlic, and bird’s-eye chili
  • 2 tbsp light soy, 1 tbsp vinegar, a little oyster sauce, salt, and sugar (the sauce)
  • 1 tbsp cornstarch, mixed with half a bowl of water
  • Water and oil, as needed

Ingredient Notes

Lao Gan Ma: The chili-crisp depth. My home-style tofu is the plain braise. Tofu puffs: Halved so they drink and burst. My how to make tofu crispy explains the fried texture. The sauce: Soy, vinegar, a little sugar – balanced.

Common Mistakes When Making This Dish

1. Dry, un-soaked puffs. Cause: not halving or not enough water. Fix: cut them and cover with water. 2. A thin, watery sauce. Cause: no starch. Fix: the slurry. 3. A raw Lao Gan Ma taste. Cause: not frying it. Fix: bloom it with the aromatics. 4. A one-note chili burn. Cause: no balance. Fix: the vinegar and sugar. 5. A greasy bowl. Cause: too much oil. Fix: a light hand.

Variations

More vegetables: Scallion or peppers at the end. My red braised tofu is the soy-only braise. Milder: Skip the chili for a plain soy glaze.

Frequently Asked Questions

What is Lao Gan Ma? Chili crisp – the sauce’s depth. Why halve the puffs? So they drink the sauce and burst with juice. How long does it take? About 15 minutes. Is it spicy? Yes, warmly – the Lao Gan Ma is the point. Is it really better than meat? The recipe swears it – and the rice bowl agrees. My silken tofu potage is the mild soup to cool it, and sweet and sour tofu the brighter plate.

How to Serve

Serve over rice – with home-style tofu, red braised tofu, and pan-fried tofu with minced pork for a tofu table, or with braised tofu with bok choy and savory tofu and egg stir-fry for variety.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s braised juicy tofu puffs is the dish I serve when the table doubts tofu can satisfy like meat, and the recipe’s soak-then-starch logic is exactly why each piece bursts. I tested it as written. I have not tested the milder version, so that is your experiment, not my claim.
