The glossy plate I make when the dougan block wants something sweet-sour is this one – braised-sauce dougan, and this home cook’s version fries the triangles gold first, then lets them drink a reduced soy-vinegar glaze. A home cook wrote it in five steps with the finish in the fourth: simmer until the sauce reduces, then a little starch to hold it. I made it as written, and it is the chewy, glossy plate of the quick rice.
Men zhi dou fu gan (焖汁豆腐干) is braised-sauce dougan – dried-tofu triangles fried until gold, then simmered in a glaze of soy, oyster, vinegar, pepper, sesame, and sugar that reduces to a gloss.
What Is Braised-Sauce Dougan Triangles?
This is the short braise of the pressed block: dougan is cut into triangles – scallion and ginger prepped – and a bowl of sauce mixes soy sauce, oyster sauce, white pepper, vinegar, sesame oil, salt, chicken powder, sugar, and a little water. The triangles fry in hot oil until both sides are gold, then the oil pours out, a little stays with the ginger and scallion white, the dougan returns with the sauce, and the pan simmers low until the liquid reduces – with a small starch slurry stirred in to hold the gloss. Scallion over the plate.
For the honeycomb braise of frozen tofu in the same glaze, my red-braised frozen tofu soaks up even more.
Why This Recipe Works
- [‘
- The triangle cut. Dougan angled for the plate.
- The one-bowl sauce. Soy, oyster, vinegar, pepper, sesame, sugar.
- Gold both sides. The fried skin holds the glaze.
- Simmer to reduce. The sauce gets into the block.
- The starch hold. A little, for the gloss.

Common Mistakes When Making This Dish
1. A pale, soft block. Cause: no good fry. Fix: gold both sides. 2. A watery plate. Cause: no reduce. Fix: simmer it down. 3. A gluey finish. Cause: too much starch. Fix: a little. 4. A burnt ginger. Cause: heat too high. Fix: low. 5. A sharp vinegar note. Cause: no sugar. Fix: both.
Variations
Spicier: Chili with the ginger. No vinegar: A straight soy glaze. My five-spice cumin dried tofu is the caramel sweet version of the block.
Frequently Asked Questions
Why cut triangles? Dougan angles catch the glaze nicely. Why fry first? The gold skin holds through the braise. Why reduce the sauce? It gets into the block instead of the plate. How long does it take? About 20 minutes. Is it spicy? Not by default – and my silken tofu potage is the soup to go with it, savory tofu and egg stir-fry the fast plate.
How to Serve
Serve with rice or congee – with Youxian-style spiced dried tofu, five-spice cumin dried tofu, and home-style tofu for a dougan table, or with red braised tofu and golden pan-fried tofu for contrast.

About the Author & Recipe Development
I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s braised-sauce dougan is the quick gloss of my pressed-block days, and the recipe’s reduce-then-starch finish is exactly how I glaze. I tested it as written. I have not tested the chili version, so that is your experiment, not my claim.
