School-Gate Doupi Sauce (豆皮卤子): The Five-Cent Cup of Childhood

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The snack I have wanted for twenty years is this one – school-gate doupi sauce, and this home cook’s version is barely a recipe at all: water, garlic chili sauce, and a little soy, then a starch drizzle with sesame and cumin. A home cook wrote it in five steps, and the last three are pure memory – the taste of childhood, the joy, the empty cup. I made it as written, and it is the five-cent cup that tastes exactly as remembered.

Glossy doupi gravy poured over tofu skin

Dou pi lu zi (豆皮卤子) is school-gate doupi sauce – water simmered with garlic chili sauce and light soy, thickened with starch, and finished with sesame and cumin, then poured over tofu skin.

What Is School-Gate Doupi Sauce?

This is the street-cart gravy of an entire childhood: water goes into the pan with garlic chili sauce and a little light soy and comes to a simmer; a starch slurry thickens it to a glossy gravy, and sesame and cumin go in for the finish that made the cup famous outside the school gate. The sauce is poured over tofu skin – and the memory does the rest.

For the fresh cold doupi plate of the same sheet, my cold tofu-skin salad is the cool bowl rather than the gravy.

Why This Recipe Works

  • The garlic chili sauce. The base of the whole cart.

  • A little light soy. Depth, not saltiness.
  • ‘, ‘

  • The starch drizzle. The gravy that clings.
  • ‘, ‘

  • Sesame and cumin. The finish of the five-cent cup.
  • ‘, ‘

  • Poured over doupi. The snack of the school gate.
  • ‘]

Equipment Needed

  • A small pan
  • A spoon for the slurry

Ingredients

  • 1 tbsp garlic chili sauce
  • A little light soy and water
  • 1 tsp cornstarch, mixed with water
  • A little sesame and cumin
  • Tofu skin (doupi), for serving

Ingredient Notes

Garlic chili sauce: The cart’s own base – adjust the heat by brand. The starch: The gravy’s body. The finish: Sesame and cumin – the childhood signature. My cold tofu-skin salad is the fresh version of the sheet.

Prep & Mise en Place

Mix the slurry; have the sauce and spices ready; prep the tofu skin.

Common Mistakes When Making This Dish

1. A thin, watery sauce. Cause: no starch or too little. Fix: the drizzle. 2. A gluey lump. Cause: starch dumped in. Fix: mixed with water, drizzled. 3. A one-note salty sauce. Cause: too much soy. Fix: a little only; the chili sauce seasons. 4. A flat finish. Cause: no cumin. Fix: both sesame and cumin. 5. A bland cart taste. Cause: timid chili sauce. Fix: a full spoon.

Variations

Spicier: A hotter chili sauce. Thicker: A little more starch. My cucumber and tofu-skin salad is the cool summer use of the same sheet.

Frequently Asked Questions

What is lu zi? A gravy – here the school-cart sauce for tofu skin. Which chili sauce? Garlic chili sauce; the heat varies by brand. Why sesame and cumin? They are the childhood signature of the cup. How long does it take? About 10 minutes. Is it spicy? Yes, by the sauce’s own heat – and my braised tofu with bok choy is the green plate to go with it, savory tofu and egg stir-fry the fast one.

How to Serve

Pour over tofu skin as a snack – with cold tofu-skin salad, cucumber and tofu-skin salad, and home-style tofu for a snack table, or with red braised tofu and golden pan-fried tofu for contrast.

Storage & Reheat

Best fresh; refrigerate 1 day and reheat gently. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s school-gate doupi sauce is the five-cent cup of my own childhood, and the recipe’s honesty – three steps of pure memory – is exactly why I kept it whole. I tested it as written. I have not tested a hotter sauce, so that is your experiment, not my claim.
