The marrying plate I make when the pork is sliced and the doupi is soaking is this one – tofu-skin and pork slices, and this home cook’s version fries the marinated pork first, then brings the sheet into the same pan. A home cook wrote it in eight steps with the finish in the title: the garlic-scape green goes in last for a moment only. I made it as written, and it is the glossy, fast plate that is simple and true.

Dou pi chao rou pian (豆皮炒肉片) is tofu-skin and pork slices – marinated pork flash-fried and set aside, then married with soaked doupi and garlic-scape in light soy, soy sauce, and oyster sauce.
What Is Tofu-Skin and Pork Slices?
This is the two-part marry: the pork is sliced and marinated; the doupi soaks in water until open. The pan heats with oil and the pork goes in for a fast fry until it changes color, then out. The white of the garlic-scape blooms in the pan, the soaked and washed doupi joins with soy sauce, light soy, salt, and oyster, and the pork returns with the garlic-scape green for one quick toss – and it is done.
For the vegetarian stir of the same sheet, my alkali-soaked tofu-skin stir needs no pork at all.
Why This Recipe Works
- [“
- Marinate first. The pork’s short rest.
- Soak the doupi open. Washed and ready.
- Flash-fry the pork, out. Color, then aside.
- Garlic-scape white first. The bloom.
- The green last, a moment. The recipe’s finish.

Common Mistakes When Making This Dish
1. Tough, dry pork. Cause: over-fry or no marinade. Fix: fast, to color, and out. 2. A dry, stiff sheet. Cause: no soak. Fix: open in water. 3. A bitter garlic-scape. Cause: the green cooked long. Fix: a moment only. 4. A soupy pan. Cause: wet doupi. Fix: wash, shake dry. 5. A salty plate. Cause: soy, light soy, oyster. Fix: taste first.
Variations
Spicier: Chili with the white of the scape. Vegetarian: Skip the pork. My alkali-soaked tofu-skin stir is the fully green version.
Frequently Asked Questions
Why marinate the pork? A short rest keeps it tender. Why soak the doupi? The sheet must open before the pan. Why the green last? It stays bright – a moment only. How long does it take? About 25 minutes. Is it spicy? Not by default – and my silken tofu potage is the soup to go with it, savory tofu and egg stir-fry the fast plate.
How to Serve
Serve with rice – with alkali-soaked tofu-skin stir, vegan yuba braise, and home-style tofu for a bean table, or with red braised tofu and golden pan-fried tofu for contrast.
Storage & Reheat

About the Author & Recipe Development
I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s doupi and pork slices is the marry plate of my quick meals, and the recipe’s green-last finish is exactly how I keep color. I tested it as written. I have not tested the vegetarian version, so that is your experiment, not my claim.
