Frozen-Tofu Dumplings (冻豆腐馅饺子): The Inherited Filling

The dumpling filling my mother taught me is this one – frozen-tofu dumplings, and this home cook’s version passes down the rules: thaw naturally, never in water; squeeze the block dry; fry it gold before the bowl. A home cook wrote it in seven steps with the egg-white note in the fifth: whites only, no yolks. I made it as written, and it is the soft, savory filling that belongs in the family pot.

Hand-folded dumplings with a frozen-tofu filling

Dong dou fu jiao zi (冻豆腐馅饺子) is frozen-tofu dumplings – naturally thawed frozen tofu squeezed, chopped, and fried gold, then mixed clockwise with egg white, dried shrimp, scallion, ginger, and seasonings into a dumpling filling.

What Is Frozen-Tofu Dumplings?

This is the inherited filling: frozen tofu comes out of the freezer and thaws on its own – never in water, the rule says – then is squeezed dry and chopped fine. A little oil and the chopped tofu fry until it turns yellow, then cool. The bowl takes egg whites only – a note for the yolks – with scallion, ginger, seafood soy, oyster sauce, a little salt, ground Sichuan pepper, and dried shrimp, stirred clockwise until the filling comes together. Then the wrapping begins.

For the braised block of the same frozen tofu, my red-braised frozen tofu skips the dumpling wrapper entirely.

Common Mistakes When Making This Dish

1. A watery filling. Cause: no squeeze. Fix: squeeze the thawed block dry. 2. A raw, beany taste. Cause: no fry. Fix: gold in the pan first. 3. A heavy, dense ball. Cause: yolks in. Fix: whites only – the recipe’s note. 4. A bland filling. Cause: no shrimp or pepper. Fix: both. 5. An uneven mix. Cause: no clockwise working. Fix: stir it together.

Variations

No shrimp: A vegetarian filling. More green: A little chive with the scallion. My cold frozen tofu salad uses the same block in a cold plate.

Frequently Asked Questions

Why thaw naturally? Water thawing ruins the texture – the recipe’s rule. Why only egg white? Yolks make the filling heavy – the note. Why fry the tofu first? Gold in the pan kills the beany note. How long does it take? About 50 minutes with the wrapping. Is it spicy? Only from a little Sichuan pepper – and my cold frozen tofu salad is the no-wrapper plate, silken tofu potage the warm soup.

How to Serve

Serve with black vinegar and chili oil – with red-braised frozen tofu, napa stew with frozen tofu, and home-style tofu for a frozen-tofu table, or with red braised tofu and golden pan-fried tofu for contrast.

Storage & Reheat

Freeze the wrapped dumplings; boil from frozen. Filling keeps 2 days chilled.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s frozen-tofu dumplings are the inherited filling of my family pot, and the recipe’s whites-only note is exactly the kind of passed-down detail I keep. I tested it as written. I have not tested the no-shrimp version, so that is your experiment, not my claim.
