Green Pepper & Dried Tofu (尖椒炒干豆腐): The Glossy Flash

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The fastest plate of the northern table is this one – green pepper and dried tofu, and this home cook’s version cuts the tofu sheet into diamonds so the sauce has somewhere to sit. A home cook wrote it in eight steps with the finish in the title: the starch goes in and the pan comes off. I made it as written, and it is the glossy, savory plate that is on the table in a quarter of an hour.

Diamond-cut dried tofu tossed with green chilies in a gloss

Jian jiao chao gan dou fu (尖椒炒干豆腐) is green pepper and dried tofu – diamond-cut pressed tofu sheet flash-fried with green chilies, garlic, and salt, finished with a fast cornstarch gloss.

What Is Green Pepper and Dried Tofu?

This is the quickest of the tofu-sheet plates: green chilies are destemmed and cut into fine slivers, and the dried tofu sheet is cut into strips, then angled into diamond shapes – the shape that catches the sauce. A thin cornstarch slurry waits at one part starch to five parts water. Garlic slices bloom in hot oil, the tofu goes in for a few tosses, the chilies follow with salt, and after a minute or two the slurry is poured in and stirred through – then off the heat at once.

For the cold salad of the same dried tofu sheet, my cold tofu-skin salad skips the pan entirely.

Why This Recipe Works

  • The diamond cut. The shape that catches the sauce.
  • Thin chili slivers. Heat without bulk.
  • Garlic first, hot oil. The fragrant base.
  • A minute or two. The tofu just warms.
  • The starch finish. Glossy, then off the heat – fast.

Equipment Needed

  • A wok or skillet
  • A small bowl for the slurry
  • A spatula

Ingredients

  • Dried tofu sheet (gan dou fu / dou fu pi), as needed
  • 2-3 green chilies (jian jiao)
  • 2 cloves garlic, sliced
  • 1 tbsp cornstarch with 5 tbsp water (the gloss)
  • A little salt and oil

Ingredient Notes

Dried tofu sheet: The pressed northern sheet. My cold tofu-skin salad uses it cool. Green chilies: The mild heat of the northern table. The gloss: One part starch to five parts water – thin.

Common Mistakes When Making This Dish

1. A lumpy, gluey finish. Cause: too much starch or slow hands. Fix: 1:5 slurry and quick toss. 2. Raw garlic bite. Cause: garlic in with the tofu. Fix: bloom it first alone. 3. Soggy chilies. Cause: cooking too long. Fix: a minute or two total. 4. A stodgy tofu sheet. Cause: thick strips. Fix: fine strips and diamonds. 5. A bland plate. Cause: salt only at the end. Fix: season in two touches.

Variations

Spicier: A dried chili with the garlic. With pork: A few slices of meat first. My home-style tofu is the soft-tofu plate of the same table.

Frequently Asked Questions

What is dried tofu? Gan dou fu – the pressed tofu sheet of northern China. Why cut diamonds? The shape catches the sauce. Why 1:5 starch to water? A thin gloss, not glue. How long does it take? About 15 minutes. Is it spicy? Mildly, from the green chilies – my savory tofu and egg stir-fry is the fast second plate, and silken tofu potage the gentle soup.

How to Serve

Serve with rice or congee – with cold tofu-skin salad, braised tofu with bok choy, and home-style tofu for a northern table, or with red braised tofu and golden pan-fried tofu for variety.

Storage & Reheat

Refrigerate 2 days; reheat quickly. Never leave out more than 2 hours. For another fast tofu sheet, my cold tofu-skin salad needs no pan.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s green pepper and dried tofu is the fastest plate of my northern-style days, and the recipe’s diamond-cut note is exactly why the sauce clings. I tested it as written. I have not tested the pork version, so that is your experiment, not my claim.
