Home-Style Stewed Frozen Tofu (家常炖冻豆腐): The Soy Seal

The quiet bowl I make when I want the frozen block at its most polite is this one – home-style stewed frozen tofu, and this home cook’s version browns the thawed block slowly, without hurry, before a drop of soy. A home cook wrote it in nine steps with the order in the title: brown, soy, greens, stock, seal. I made it as written, and it is the gentle, absorbent bowl that is the frozen block at its best.

Brown-sealed frozen tofu with greens in a light stock

Jia chang dun dong dou fu (家常炖冻豆腐) is home-style stewed frozen tofu – thawed frozen tofu browned slowly, sealed with light soy, then steamed under a lid with greens in a little stock until the block drinks it.

What Is Home-Style Stewed Frozen Tofu?

This is the gentle way with frozen tofu: garlic blooms in oil, the thawed block goes in and is left alone – no hurry – until it carries a little gold. Light soy seals it, youcai or other greens toss in for a moment, and a little stock follows, just enough, because this is a short braise not a long soup. The lid goes on and the block drinks, until the pan is nearly dry and the tofu is soft all the way through.

For the spicy wok version of the same thawed block, my red-braised frozen tofu braises with pork and chili.

Why This Recipe Works

  • The patient brown. No hurry on the thawed block – the recipe’s tone.
  • The soy seal. Color and savor before anything else.
  • Greens for a moment. Bright against the brown.
  • Stock, not too much. A short braise, the recipe says.
  • The covered drink. The block absorbs until soft.

Equipment Needed

  • A pan with a lid
  • A spatula

Ingredients

  • 1 block of frozen tofu, thawed
  • A handful of youcai or other greens
  • 2 cloves garlic, minced
  • 1 tbsp light soy
  • About 1/2 cup of stock (or water)
  • A little salt

Ingredient Notes

Frozen tofu: Thawed and browned patiently. My napa stew with frozen tofu is the longer pot. The greens: Youcai – or whatever green is in the fridge. Stock: A little, for a short braise.

Prep & Mise en Place

Thaw the tofu; mince the garlic; wash the greens; have the stock warm.

Common Mistakes When Making This Dish

1. A pale, raw block. Cause: rushing the brown. Fix: patience until the gold. 2. A soupy flood. Cause: too much stock. Fix: a little – short braise. 3. Soggy greens. Cause: cooked too long. Fix: a few tosses only. 4. A soy-only saltiness. Cause: no salt check. Fix: taste, then salt. 5. A dry center. Cause: covered too short. Fix: let it drink under the lid.

Variations

With mushroom: A few shiitake with the greens. Spicier: A little chili with the garlic. My shiitake and frozen tofu braise is the mushroom version.

Frequently Asked Questions

Why brown the thawed tofu slowly? It takes color without breaking – the patient way. How much stock? A little – the recipe says this is not a long soup. Can I use water? Yes, but stock is better. How long does it take? About 20 minutes. Is it spicy? Not at all – and my silken tofu potage is the soup to follow, savory tofu and egg stir-fry the fast plate.

How to Serve

Serve warm with rice – with red-braised frozen tofu, napa stew with frozen tofu, and home-style tofu for a frozen-tofu table, or with braised tofu with bok choy and golden pan-fried tofu for contrast.

Storage & Reheat

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s home-style stewed frozen tofu is the quiet bowl of my freezer days, and the recipe’s no-hurry tone is exactly how I treat the thawed block. I tested it as written. I have not tested the spicy version, so that is your experiment, not my claim.
