Luffa Braised Tofu (丝瓜烧豆腐): The Light, Green Summer Bowl

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The dish I make when summer says keep it light is this one – luffa braised tofu, and this home cook’s version is the refreshing bowl that needs only a wok and five minutes of cooking. A home cook wrote it in eight steps with the technique in the title: salt-soak the luffa so it stays green, then blast it dry. I made it as written, and it is the tender, clean, no-guilt plate of summer.

Luffa braised with hand-torn tofu

Si gua shao dou fu (丝瓜烧豆腐) is luffa braised tofu – ridged luffa and hand-torn tofu tossed in a light garlic wok with a splash of water until the luffa is tender and the tofu warm.

What Is Luffa Braised Tofu?

This is the lightest way I know to eat tofu in summer: ridged luffa (the long green gourd) cut into rolling chunks and salt-soaked so it holds its color, hand-torn tofu, and a hot wok with garlic and scallion. The luffa goes in first over high heat to cook off its water, the tofu joins with a small splash of water, and the pan simmers a few minutes until everything is tender. A few colored pepper dice finish it for color.

For the greens-braised tofu sibling of the same light pan, my braised tofu with bok choy swaps the luffa for the leafy green.

Why This Recipe Works

  • The salt soak. Luffa keeps its green and won’t oxidize dark.
  • The hand-torn tofu. Ragged edges catch the light sauce.
  • The high-heat dry-out. Luffa cooks off its water before it stews.
  • A splash of water, not stock. The light bowl stays light.
  • Ready in minutes. Summer-fast and refreshing.

Equipment Needed

  • A wok or skillet
  • A spatula

Ingredients

  • 1 luffa, peeled and cut into rolling chunks
  • 300 g (10.5 oz) tofu, hand-torn into large pieces
  • A little scallion, ginger, and garlic, minced
  • A little colored bell pepper, diced, for color
  • Salt and chicken powder (or vegetarian), to taste
  • Oil, as needed

Ingredient Notes

Luffa: The ridged gourd that stays light and green with the salt soak. My braised tofu with bok choy is the leafy green version. Tofu: Torn by hand so the edges catch the sauce. My home-style tofu is the saucier classic.

Prep & Mise en Place

Peel and chunk the luffa, soak in salted water 5 minutes; tear the tofu; mince the aromatics. For the torn-tofu technique, my home-style tofu tears the same way, and pan-fried tofu with minced pork is the saucier companion.

Common Mistakes When Making This Dish

1. Gray, oxidized luffa. Cause: skipping the salt soak. Fix: the 5-minute soak. 2. Watery, stewed luffa. Cause: low heat. Fix: high heat to cook off the water. 3. A soupy pan. Cause: too much water. Fix: a small splash. 4. Broken tofu. Cause: hard tossing. Fix: push gently. 5. A bland bowl. Cause: timid seasoning. Fix: salt and the aromatics.

Variations

Spicy: A little chili with the aromatics. My home-style tofu is the fuller saucier route. More greens: Bok choy with the luffa. My braised tofu with bok choy is exactly that plate.

Frequently Asked Questions

Why soak the luffa in salt water? It keeps the green and stops oxidation. Can I use frozen luffa? Fresh is best – frozen turns mushy. Is it really low-calorie? Luffa and tofu with almost no oil – yes. How long does it take? About 15 minutes. Is it spicy? Not by default – my silken tofu potage is the silky soup side and sweet and sour tofu the saucy one.

How to Serve

Serve hot with rice – with braised tofu with bok choy, home-style tofu, and red braised tofu for a tofu table, or with tofu mushroom soup for variety.

Storage & Reheat

Refrigerate 1-2 days; reheat gently. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s luffa braised tofu is the light bowl I make in summer, and the recipe’s salt-soak trick is exactly why the luffa stays green. I tested it as written. I have not tested the spicy variation, so that is your experiment, not my claim.
