Luffa Tofu Egg Soup (丝瓜豆腐鸡蛋汤): The 10-Minute Summer Bowl

The soup I make when summer asks for something light and quick is this one – luffa tofu egg soup, and this home cook’s version is the ten-minute bowl that uses one pot. A home cook wrote it in five steps with the timing in the title: fry the eggs, soften the luffa, simmer three minutes. I made it as written, and it is the fresh, clean summer soup that is ready before the rice.

Luffa tofu egg soup in a light broth

Si gua dou fu ji dan tang (丝瓜豆腐鸡蛋汤) is luffa tofu egg soup – golden fried eggs, luffa, and tofu simmered in a light, seasoned broth.

What Is Luffa Tofu Egg Soup?

This is the simplest summer soup: two eggs are fried golden and set aside, luffa is stir-fried briefly in a little oil until soft, water joins and comes to a boil, and the tofu and fried eggs return for a three-minute simmer with salt and pepper. It is the light, clean soup that lets the luffa’s own sweetness carry the bowl.

For the mushroom-egg soup sibling of the same light pot, my tofu mushroom soup with egg trades the luffa for mushrooms.

Why This Recipe Works

  • The golden fried eggs. The rich note in a light broth.
  • The brief luffa stir-fry. Softens it without stewing.
  • The three-minute simmer. Everything warms through, nothing overcooks.
  • Salt and pepper only. The luffa’s sweetness is the flavor.
  • One pot, ten minutes. Summer-fast.

Equipment Needed

  • A pot
  • A spatula

Ingredients

  • 2 eggs
  • 1 luffa, cut into pieces
  • 200 g (7 oz) tofu, cut into cubes
  • Salt and white pepper, to taste
  • A little oil

Ingredient Notes

Eggs: Fried golden first – the rich note. My tofu mushroom soup with egg uses eggs the same way. Luffa: The summer gourd, sweet and light. Tofu: Cubed and simmered last so it stays tender. My types of tofu explained sorts the blocks.

Common Mistakes When Making This Dish

1. A greasy soup. Cause: too much oil for the eggs. Fix: a light hand. 2. Raw luffa. Cause: skipping the stir-fry. Fix: soften it first. 3. A cloudy, overcooked broth. Cause: simmering too long. Fix: three minutes. 4. Broken tofu. Cause: hard stirring. Fix: gentle. 5. A bland bowl. Cause: timid salt. Fix: season to taste.

Variations

More greens: A handful of spinach with the luffa. My tofu mushroom soup with egg is the mushroom version. Silken tofu: Use silken for a softer bite.

Frequently Asked Questions

Why fry the eggs first? The golden eggs add a rich note to the light broth. Can I use frozen luffa? Fresh is best. How long does it take? About 10 minutes. Is it spicy? Not at all. What else goes in? Salt and white pepper are enough – the luffa is the flavor, and my silky shrimp and tofu is the fuller seafood soup beside it.

How to Serve

Serve hot – with tofu mushroom soup with egg, silken tofu potage, and home-style tofu for a soup table, or with braised tofu with bok choy and savory tofu and egg stir-fry for variety.

Storage & Reheat

Refrigerate 1 day; reheat gently. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s luffa tofu egg soup is the ten-minute bowl of my summer, and the recipe’s light touch is exactly why the luffa’s sweetness carries it. I tested it as written. I have not tested the spinach version, so that is your experiment, not my claim.
