Golden-Egg Milky Tofu Soup (奶白鸡蛋豆腐汤): The White Pot

The white pot I make when I want milk without a drop of dairy is this one – golden-egg milky tofu soup, and this home cook’s version fries four eggs to deep gold, then pours boiling water over them so the broth turns white. A home cook wrote it in seven steps with the trick in the title: the color comes from the fried egg. I made it as written, and it is the milky, savory bowl that is white as a dairy soup.

Milky white broth with golden egg, tofu, and napa cabbage

Nai bai ji dan dou fu tang (奶白鸡蛋豆腐汤) is golden-egg milky tofu soup – four eggs fried golden and cut, shocked with boiling water into a milky broth, then simmered with tofu, ginger, and napa cabbage.

What Is Golden-Egg Milky Tofu Soup?

This is the dairy-free white pot: four eggs go into hot oil and fry until both sides are golden and a little blistered, then are cut into pieces in the pan. Boiling water pours over them – the shock that turns the broth white – and tofu cubes join with a few shreds of ginger for ten quiet minutes. Napa cabbage goes in last for three more with salt, chicken powder, white pepper, and a few drops of sesame oil.

For the egg-tofu soup without the milky trick, my tofu mushroom soup with egg is the lighter bowl.

Why This Recipe Works

  • Four eggs, deep gold. The color engine of the broth.
  • Boiling water, hard pour. The shock that makes it white.
  • Ginger for the fish-adjacent lift. Clean and warm.
  • Ten quiet minutes. The white deepens.
  • Napa last, three minutes. Sweet and soft.

Equipment Needed

  • A pot
  • A spatula
  • A ladle

Ingredients

  • 4 eggs

The eggs: Fried deep gold – the milk maker. Boiling water: Poured hard over the egg for the white shock. Ginger: The clean lift. My milky crucian carp tofu soup uses the same trick with a whole fish.

Common Mistakes When Making This Dish

1. A clear, watery broth. Cause: eggs not golden or water not boiling. Fix: deep gold and a hard pour. 2. A greasy slick. Cause: too much oil with the eggs. Fix: a modest film only. 3. An eggy, raw note. Cause: the broth not simmered. Fix: the full ten minutes. 4. Mushy cabbage. Cause: added too early. Fix: last, three minutes. 5. A flat bowl. Cause: no final seasoning. Fix: chicken powder, pepper, and the sesame oil.

Variations

More greens: Bok choy instead of napa. With fish: The same trick with crucian carp – see my milky crucian carp tofu soup.

Frequently Asked Questions

Why does the broth turn white? The fried egg and the boiling-water shock – no dairy needed. Can I use fewer eggs? Two still help, four are the recipe’s engine. Why ginger? It keeps the pot clean and warm. How long does it take? About 20 minutes. Is it spicy? Only from the white pepper – my savory tofu and egg stir-fry is the fast plate beside it, and silken tofu potage the gentle one.

How to Serve

Serve hot – with tofu mushroom soup with egg, milky crucian carp tofu soup, and home-style tofu for a soup table, or with red braised tofu and golden pan-fried tofu for contrast.

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s golden-egg milky tofu soup is the white pot of my home when the table wants comfort, and the recipe’s boiling-water trick is exactly the one I use for fish soups. I tested it as written. I have not tested the fish version of this exact pot, so that is your experiment, not my claim.
