- Cornstarch & Salt: Used to coat the shrimp. This seals in the juices and gives the shrimp a lovely texture.
- Ketchup: Yes, regular tomato ketchup! It provides the base flavor, acidity, and umami.
- Sugar: White granulated sugar is traditional here to balance the acidity of the ketchup.
- Oil: Neutral oil (vegetable, canola, or peanut) for frying.

Recipe Notes Before We Begin
- Dry the Protein: Water is the enemy of a good sear. Make sure you pat both the tofu and the shrimp dry with paper towels before cooking.

How to Make Pan-Fried Tofu with Shrimp
Step 1: Pan-Fry the Tofu Heat about 1 tablespoon of oil in your skillet over medium-high heat. Place the tofu slices in the pan in a single layer. Fry for 3–4 minutes until the bottom is golden brown. Flip carefully and fry the other side.
- Visual Cue: The tofu should look golden and feel slightly firm to the touch. Remove the tofu from the pan and set it aside on a plate to drain any excess oil.


Step 2: Marinate and Pan-Fry the Shrimp While the pan is still hot (add a little more oil if needed), take your shrimp. In a small bowl, mix the shrimp with a pinch of salt and about 1 teaspoon of cornstarch mixed with a splash of water (thick slurry). Toss to coat. Place the shrimp in the pan. Pan-fry for about 1-2 minutes per side until they turn pink and opaque.
- Note: The original method suggests you can deep-fry the shrimp for a crunchier texture if you don’t mind the oil, but pan-frying is healthier and easier for cleanup. Remove the shrimp and set aside with the tofu.



Step 3: Create the Tomato Glaze In the same pan (wipe it out if there are burnt bits), add another tablespoon of oil over medium heat. Pour in the ketchup and the sugar. Stir constantly.
- Visual Cue: The oil and ketchup will sizzle and fuse together into a vibrant, bubbling red sauce. This takes about 30 seconds.



Step 4: Combine and Serve Pour the cooked tofu and shrimp back into the pan with the sauce. Toss everything gently but quickly so that every piece is coated in that glossy red glaze. Turn off the heat. Sprinkle with the chopped scallions. Serve immediately.
