Tofu-Skin Pork Rolls (千张肉卷): Steamed, Juices Glazed Back On

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The neat plate I make when I want a steamed dinner that looks made is this one – tofu-skin pork rolls, and this home cook’s version rolls two logs from one halved sheet so nothing is wasted. A home cook wrote it in ten steps and even rescued the crumbled meat ends into the glaze – the note says it plainly: not wasted, and delicious. I made it as written, and it is the tidy, saucy plate that makes a Tuesday feel Sunday.

Sliced tofu-skin pork rolls glazed on a plate

Qian zhang rou juan (千张肉卷) is tofu-skin pork rolls – seasoned pork and wood-ear rolled tightly in qianzhang sheets, steamed 25 minutes, and glazed with a soy-cornstarch sauce made from the plate juices.

What Is Tofu-Skin Pork Rolls?

This is the roll-and-steam plate: pork is minced with soaked wood-ear and scallion, bound with light soy, salt, and starch. Each qianzhang sheet is halved, the filling is spread leaving a clean edge, and each half is rolled into a log – two rolls per sheet – then steamed 25 minutes. The juices that collect in the plate are poured into a pan with water, soy, a little oil, and sugar, thickened with starch, and poured back over the rolls with scallion.

For another stuffed-steam plate from the same steamer, my steamed tofu-stuffed shiitake fills caps instead of rolling sheets.

Common Mistakes When Making This Dish

1. Rolls that unroll in the steam. Cause: filling to the edge. Fix: leave the clean edge. 2. A dry, dense filling. Cause: no starch or lean-only pork. Fix: bind with starch and a little fat. 3. A watery plate. Cause: no glaze. Fix: thicken the juices. 4. Soggy sheets. Cause: over-steaming. Fix: the 25 minutes. 5. A pale, flat plate. Cause: no soy in the glaze. Fix: the full sauce.

Variations

Vegetarian: Mushroom filling instead of pork. Spicier: Chili in the glaze. My steamed tofu-stuffed shiitake is another steamed plate for the same pot.

Frequently Asked Questions

What is qianzhang? Thin tofu-skin sheets, sold dried or fresh. Why halve the sheet? One sheet rolls two logs – the recipe’s economy. Why the plate juices? They are the flavor, and the glaze needs them. How long does it take? About 50 minutes with the steam. Is it spicy? Not by default – my silken tofu potage is the soup to go with it, and savory tofu and egg stir-fry the fast plate.

How to Serve

Serve warm with rice – with steamed tofu-stuffed shiitake, home-style tofu, and red braised tofu for a steamed table, or with braised tofu with bok choy and golden pan-fried tofu for contrast.

Storage & Reheat

Refrigerate 2 days; re-steam to reheat. Never leave out more than 2 hours.

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s tofu-skin pork rolls are the steamed plate of my tidy dinners, and the recipe’s waste-nothing glaze note is exactly how I cook. I tested it as written. I have not tested the vegetarian version, so that is your experiment, not my claim.
