Shiitake & Frozen Tofu Braise (香菇冻豆腐): The Savory Squeeze

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The plate I make when frozen tofu meets the mushroom drawer is this one – shiitake and frozen tofu braise, and this home cook’s version sears the tofu golden first, then lets it drink a soy-oyster sauce. A home cook wrote it in ten steps with a confession in the middle: a little celery makes it smell better, but it is optional. I made it as written, and it is the savory, sauce-squeezing plate that is quietly very good.

Golden frozen tofu braised with shiitake in a soy glaze

Xiang gu dong dou fu (香菇冻豆腐) is shiitake and frozen tofu braise – frozen tofu pan-golden, then simmered with shiitake, ginger, and green pepper in a soy-oyster sauce until the honeycomb drinks it.

What Is Shiitake and Frozen Tofu Braise?

This is the frozen block at its most useful: tofu is cut in cubes (frozen tofu, thawed) and pan-fried until both sides are gold, then lifted out. Ginger, garlic, and shiitake bloom in the same pan – celery too, if you keep it – and the mixed sauce of light soy, oyster sauce, sugar, and dark soy goes in with water. The golden tofu returns and simmers under a low lid until the sauce squeezes into every hole of the frozen block.

For the fresh-tofu mushroom soup of the same pair, my tofu mushroom soup with egg simmers instead of sears.

Why This Recipe Works

  • The golden sear. Frozen tofu with edges that hold.
  • Shiitake with ginger and garlic. The savory bloom.
  • The optional celery. The recipe’s aside – it adds fragrance.
  • Low, covered simmer. The sauce gets in.
  • Every bite squeezes sauce. The frozen block’s whole point.

Equipment Needed

  • A wok or skillet
  • A bowl for the sauce
  • A spatula

Ingredients

  • 1 block of frozen tofu, thawed
  • 5-6 shiitake mushrooms, sliced
  • 1 green pepper in pieces, with a little ginger, garlic, and optional celery
  • 1 tbsp light soy, 1 tbsp oyster sauce, a little sugar and dark soy, and water (the sauce)

Ingredient Notes

Frozen tofu: The thawed block, seared gold. My red-braised frozen tofu is the spicier version. Shiitake: The savory base with ginger and garlic. The sauce: Soy, oyster, sugar – mixed ahead.

Common Mistakes When Making This Dish

1. A dry, chewy block. Cause: no simmer. Fix: the covered low simmer and enough sauce. 2. A pale, unseared tofu. Cause: skipping the gold. Fix: sear both sides first. 3. A thin, watery sauce. Cause: no sugar or too much water. Fix: the glaze and a splash only. 4. A raw shiitake smell. Cause: not bloomed. Fix: fry with the ginger and garlic. 5. A salty plate. Cause: soy plus oyster. Fix: taste first.

Variations

Spicier: More chili with the ginger. More green: Celery as the recipe suggests. My tofu mushroom soup with egg is the soupy version of the same pair.

Frequently Asked Questions

What is frozen tofu? Tofu frozen until honeycombed – it drinks sauce. Why sear it first? Golden edges hold through the braise. Is the celery needed? No – the recipe calls it optional but fragrant. How long does it take? About 20 minutes. Is it spicy? Only from a little chili, if added – my silken tofu potage is the gentle soup beside it, and savory tofu and egg stir-fry the fast second plate.

How to Serve

Serve over rice – with red-braised frozen tofu, home-style tofu, and braised tofu with bok choy for a tofu table, or with golden pan-fried tofu and red braised tofu for contrast.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s shiitake and frozen tofu is the plate I make from the freezer drawer, and the recipe’s optional-celery aside is the kind of honesty I like. I tested it as written. I have not tested it without the oyster sauce, so that is your experiment, not my claim.
