Stuffed Tofu (酿豆腐): The Flip-First Hakka Classic Bowl

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The Hakka classic I make when I want tofu to feel like a gift is this one – stuffed tofu, and this home cook’s version is the detailed walkthrough with the trick in the title: meat-side down first, flipped with care. A home cook wrote it in fourteen steps with the caution in the middle: the flip is the critical step. I made it as written, and it is the charred, saucy tofu that holds its pork like a treasure.

Stuffed tofu seared and glazed with pork filling

Niang dou fu (酿豆腐) is stuffed tofu – firm tofu hollowed, filled with seasoned pork, seared meat-side down until charred, then braised in a soy glaze.

What Is Stuffed Tofu?

This is the Hakka stuffed tofu: firm tofu is halved and cut into six pieces, each hollowed with a spoon, and the pocket is filled with pork seasoned with tenderizer, ginger, oyster sauce, scallion, and salt. The stuffed side goes down first in the pan – the critical flip, done with care – and sears to a dark char that seals the filling. After both sides are golden, a bowl sauce of soy, oyster sauce, pepper, and water braises the tofu about three minutes, then reduces to a glaze over high heat.

For the skillet sibling of the same pork-tofu pair, my pan-fried tofu with minced pork skips the stuffing for speed.

Why This Recipe Works

  • The hollowed pocket. The tofu holds its pork.
  • Meat-side down first. The char seals the filling – the recipe’s critical step.
  • The careful flip. Stuffed tofu breaks if rushed.
  • The three-minute braise. The sauce gets in without softening the crust.
  • The high-heat glaze. A glossy finish.

Equipment Needed

  • A nonstick skillet
  • A spoon for hollowing
  • A spatula
  • A bowl for the sauce

Ingredients

  • 200 g (7 oz) pork mince
  • A little tenderizer, ginger, oyster sauce, scallion, and salt
  • 1 block of firm tofu, halved and cut into six
  • 2 tbsp light soy, 1 tbsp oyster sauce, pepper, and water (the braise sauce)

Ingredient Notes

Pork mince: Seasoned with tenderizer and aromatics. My pan-fried tofu with minced pork uses the same pork loose. Tofu: Firm, halved, and hollowed. The braise: Soy, oyster, pepper, and water – then reduce to glaze.

Common Mistakes When Making This Dish

1. Empty, burst pockets. Cause: filling falling out. Fix: the meat-side-down char seals it. 2. Broken tofu. Cause: rushed flip. Fix: careful, gentle. 3. A raw pork center. Cause: short braise. Fix: the full three minutes. 4. A pale, un-charred tofu. Cause: not enough heat. Fix: let the meat side char. 5. A watery pan. Cause: too much sauce. Fix: enough to braise, then reduce.

Variations

Fish filling: Some versions use fish paste. My home-style tofu is the un-stuffed braise. Spicy: Chili in the sauce.

Frequently Asked Questions

Why meat-side down first? The char seals the filling – the recipe’s critical step. Can I use chicken? Yes, ground chicken works. Why the careful flip? Stuffed tofu breaks if rushed. How long does it take? About 35 minutes. Is it Hakka? Yes – the classic Hakka stuffed tofu, and my silken tofu potage is the light soup to follow, sweet and sour tofu the brighter plate.

How to Serve

Serve with rice – with pan-fried tofu with minced pork, home-style tofu, and red braised tofu for a stuffed-tofu table, or with braised tofu with bok choy and savory tofu and egg stir-fry for variety.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours. For another tofu-with-pork plate, my pan-fried tofu with minced pork is the quicker version.

Allergen Notice

This recipe contains pork, soy (soy sauce, tofu), and shellfish (oyster sauce). It is free of gluten (verify the sauces), dairy, egg, nuts, and fish.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s stuffed tofu is the Hakka classic I serve when tofu should feel like a gift, and the recipe’s meat-side-down logic is exactly why the filling stays sealed. I tested it as written. I have not tested the fish version, so that is your experiment, not my claim.
