Three-Delicacy Tofu Soup (三鲜豆腐汤): The White Mushroom Broth

The umami soup I make when I want white and comforting is this one – three-delicacy tofu soup, and this home cook’s version simmers shiitake, dried shrimp, and seaweed with tofu into a milky broth. A home cook wrote it in six steps with the note in the title: the tofu soup is better the longer it simmers. I made it as written, and it is the white, savory soup that is a bowl of comfort.

Shiitake, shrimp, and seaweed simmered with tofu

San xian dou fu tang (三鲜豆腐汤) is three-delicacy tofu soup – shiitake, dried shrimp, and seaweed simmered with tofu into a milky white broth.

What Is Three-Delicacy Tofu Soup?

This is the three-delicacy soup of the Chinese home: shiitake mushrooms are sliced and pan-fried lightly with ginger, dried shrimp bloom until fragrant, and water joins with tofu and seaweed to simmer about twenty minutes – the recipe says the tofu soup is better the longer it cooks. The result is a milky, savory broth built from the three umami sources: mushroom, shrimp, and seaweed.

For the mushroom-egg soup sibling of the same pot, my tofu mushroom soup with egg swaps the shrimp for the egg.

Why This Recipe Works

  • The pan-fried shiitake. The first layer of umami.
  • The bloomed dried shrimp. Fragrant and savory.
  • The twenty-minute simmer. The tofu soup is better longer – the recipe’s note.
  • Seaweed last. The third delicacy, quick to soften.
  • A white, comforting broth. Umami in a bowl.

Equipment Needed

  • A pot
  • A spatula

Ingredients

  • 6-8 shiitake mushrooms, sliced
  • 1 tbsp dried shrimp
  • 1 block of tofu, in cubes
  • A handful of seaweed (wakame or kelp)
  • A little ginger
  • Salt and white pepper, to taste

Ingredient Notes

Shiitake: Pan-fried first for the umami base. My tofu mushroom soup with egg is the egg version. Dried shrimp: Bloomed until fragrant – the second delicacy. Seaweed: The third, quick to soften. My silken tofu potage is the tofu-only soup.

Common Mistakes When Making This Dish

1. A thin, clear broth. Cause: not enough simmer. Fix: the full twenty minutes. 2. A fishy shrimp note. Cause: not blooming it. Fix: fry until fragrant first. 3. A slimy seaweed. Cause: too much or too early. Fix: a handful, added with the tofu. 4. A bland soup. Cause: timid seasoning. Fix: salt and white pepper to taste. 5. Broken tofu. Cause: hard stirring. Fix: gentle.

Variations

More greens: A little spinach at the end. My tofu mushroom soup with egg is the egg addition. Silken tofu: Use silken for a softer bite.

Frequently Asked Questions

What are the three delicacies? Mushroom, dried shrimp, and seaweed – the umami trio. Why simmer so long? The recipe says the tofu soup is better longer. Can I skip the shrimp? Yes, for a vegetarian version with more mushroom. How long does it take? About 30 minutes. Is it spicy? Not at all – my pan-fried tofu with minced pork is the savory plate beside it, and sweet and sour tofu the brighter one.

How to Serve

Serve hot – with tofu mushroom soup with egg, silken tofu potage, and home-style tofu for a soup table, or with braised tofu with bok choy and savory tofu and egg stir-fry for variety.

Storage & Reheat

Refrigerate 2 days; reheat gently. Never leave out more than 2 hours. For another umami tofu soup, try my tofu mushroom soup with egg.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s three-delicacy tofu soup is the white bowl I make for comfort, and the recipe’s long-simmer note is exactly why the broth turns milky. I tested it as written. I have not tested the vegetarian version, so that is your experiment, not my claim.
