Steamed Veggie Doupi Rolls (豆皮蔬菜卷): The Flour-Bound Spiral

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The bright rolls I make when the doupi sheets and the greens are both in the kitchen are these – steamed veggie doupi rolls, and this home cook’s version binds the filling with flour and egg so it lies flat and rolls tight. A home cook wrote it in nine steps with the dip in the eighth: light soy, vinegar, and a few drops of sesame oil. I made it as written, and it is the colorful, tender roll that eats like a light feast.

Sliced veggie rolls with a soy-vinegar dip

Dou pi shu cai juan (豆皮蔬菜卷) is steamed veggie doupi rolls – carrot and spinach blanched, chopped chicken, and a flour-and-egg binder spread over tofu-skin sheets, rolled tight, steamed eight to ten minutes, and served sliced with a soy-vinegar dip.

What Is Steamed Veggie Doupi Rolls?

This is the roll-and-steam of the vegetable drawer: carrots are shredded and spinach cut in segments; both blanch briefly in salted, oiled water – spinach just to color, carrot thirty seconds – so they stay bright. The blanched greens go into a container with chicken mince and seasoning, and enough all-purpose flour to make a filling that will spread flat, not run. It spreads over the tofu-skin sheets and rolls tight – no air – then steams eight to ten minutes, rests to warm, and slices into thick pieces for the dip.

For the pork rolls of the same sheets, my tofu-skin pork rolls fill the sheets with meat instead of greens.

Equipment Needed

  • A steamer

Common Mistakes When Making This Dish

1. Soggy, colorless greens. Cause: no salt-oil blanch or too long. Fix: salted, oiled, quick. 2. A runny filling. Cause: no flour. Fix: enough to spread flat. 3. Rolls that open in the steam. Cause: air or loose rolling. Fix: roll tight. 4. A gluey, wet center. Cause: under-steamed. Fix: the full 8-10 minutes. 5. A bland bite. Cause: no dip. Fix: the soy-vinegar-sesame bowl.

Variations

No chicken: A pure vegetable filling. Spicier: Chili in the dip. My tofu-skin pork rolls are the all-meat answer.

Frequently Asked Questions

Why blanch with salt and oil? The salt seasons; the oil keeps the greens bright. Why flour in the filling? It binds so the roll spreads and holds. Why rest before slicing? Warm rolls slice clean. How long does it take? About 35 minutes. Is it spicy? Not by default – and my silken tofu potage is the soup to go with it, cold tofu-skin salad the cool side.

How to Serve

Serve warm with the dip – with tofu-skin pork rolls, steamed tofu-stuffed shiitake, and home-style tofu for a steamed table, or with red braised tofu and golden pan-fried tofu for contrast.

Storage & Reheat

Refrigerate 2 days; re-steam to reheat. Never leave out more than 2 hours.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s veggie doupi rolls are the bright steam of my light days, and the recipe’s salt-oil blanch is exactly the color trick I use on greens. I tested it as written. I have not tested the no-chicken version, so that is your experiment, not my claim.
