Youcai Greens & Tofu Braise (油菜烧豆腐): The Shrimp-Salt Pan

Some links may be affiliate links. As a chef in China, I only recommend tofu brands, sauces, and cookware I actually cook with in my own kitchen. You can read my full disclosure here.

The green plate I make when the greens are young and sweet is this one – youcai greens and tofu braise, and this home cook’s version tosses a handful of dried shrimp into the greens for the salt of the sea. A home cook wrote it in five steps with the order in the title: tofu gold first, greens and shrimp second, then the pan joins them. I made it as written, and it is the fast, savory plate that makes greens disappear.

Golden tofu with seared greens and dried shrimp

You cai shao dou fu (油菜烧豆腐) is youcai greens and tofu braise – pan-golden tofu folded into quick-seared rape greens with dried shrimp, oyster sauce, and soy, finished with a cornstarch gloss if you like.

What Is Youcai Greens and Tofu Braise?

This is the fast green-and-gold plate: tofu is sliced and pan-fried until both sides are golden and blistered, then set aside. The pan’s leftover oil sears the youcai – young rape greens – with sliced garlic until they change color, when a small handful of dried shrimp joins for its sea-salt pop. Oyster sauce, light soy, and salt go in, the golden tofu returns, and a cornstarch gloss or a pinch of chicken powder finishes it.

For the bok choy braised tofu of the same green pan, my braised tofu with bok choy is the soy-braise version.

Why This Recipe Works

  • The golden sear first. Tofu with edges that hold.
  • Greens to a color change. Bright, quick, sweet.
  • Dried shrimp with the greens. The sea-salt pop.
  • Oyster and soy together. The savory glaze.
  • The optional gloss. A cornstarch finish or a pinch of chicken powder.

Equipment Needed

  • A wok or skillet
  • A spatula

Ingredients

  • 1 block of firm tofu, sliced
  • A big handful of youcai greens (young rape greens)
  • 1 tbsp dried shrimp
  • 2 cloves garlic, sliced
  • 1 tbsp oyster sauce and 1 tbsp light soy, plus salt
  • Optional: cornstarch slurry or a pinch of chicken powder

Ingredient Notes

Tofu: Pan-golden first – edges that hold. Youcai: Young rape greens; baby bok choy is a fair stand-in. My braised tofu with bok choy is the longer braise. Dried shrimp: The salt of the sea in the greens.

Common Mistakes When Making This Dish

1. Wilted, bitter greens. Cause: cooking too long. Fix: to a color change, then out. 2. Pale, soft tofu. Cause: no good sear. Fix: golden and blistered both sides. 3. A fishy shrimp note. Cause: shrimp in too early. Fix: with the greens, once they change color. 4. A salty plate. Cause: oyster, soy, salt, and shrimp. Fix: taste before the salt. 5. A watery pool. Cause: no gloss. Fix: the optional cornstarch.

Variations

No shrimp: A vegetarian plate with a little more soy. Spicier: Chili with the garlic. My golden pan-fried tofu is the greens-free sear.

Frequently Asked Questions

What are youcai? Young rape greens – sweet, quick-cooking; baby bok choy works too. Why the dried shrimp? The recipe’s sea-salt layer in the greens. Why sear the tofu first? Golden edges hold through the toss. How long does it take? About 15 minutes. Is it spicy? Not by default – my silky shrimp and tofu is the seafood plate for another night, and savory tofu and egg stir-fry the fast second plate.

How to Serve

Serve with rice – with braised tofu with bok choy, golden pan-fried tofu, and home-style tofu for a green table, or with savory tofu and egg stir-fry and red braised tofu for contrast.

Storage & Reheat

Refrigerate 2 days; reheat quickly. Never leave out more than 2 hours. For the cold green version of the same greens, my cold tofu-skin salad needs no pan.

About the Author & Recipe Development

I am Jason Guo, a Chinese chef who has cooked professionally for more than five years – including time as a head chef – and now runs my own small restaurant in China, where tofu appears on the menu almost every day. This xiachufang cook’s youcai and tofu braise is the green plate of my quick meals, and the recipe’s shrimp-with-the-greens move is exactly the kind of shortcut I like. I tested it as written. I have not tested the vegetarian version, so that is your experiment, not my claim.
